163-2020 – Mushrooms and Chicken in white sauce


Today’s photo of the day, part of “a photo a day challenge 2020”, is a recipe of Mushrooms and Chicken in White Sauce, called “Ciulama cu pui si ciuperci” in Romania.

Mushrooms and Chicken in White Sauce

It might not look appealing but it taste divine. Coincidentally, I had some leftovers polenta from lunch, which works a treat with this recipe.
I’ll try in a few words to explain how it’s done.
I chopped the mushrooms, 2 small onions and put into a pan with sunflower cooking oil.

At the same time, I boiled the chicken in another pot, with some vegetables (carrots, parsnip, onion, bay leaves and salt. Let them boil for about 30 minutes making sure you skim the foam from the top from time to time.

After the mushrooms were cooked, I moved them in a separate container and cleaned the pan for the next step in the process.
In the clean pan, I used a large spoon with butter and half a glass of plain flower and kept stirring. Add chicken broth from time to time and keep stirring. I also added half a glass of milk and more broth until I was happy with the sauce consistency, not to runny not to solid.

I added the chicken tights and mushrooms on top of the white sauce and finish it with two spoons of Crème fraîche.
